We sell quite a few models of leather saddles, and they're not just for the cute looks (though it helps). It's a good material for boots and clothing for the same reasons it's great for saddles: very tough and long-lasting, reasonably waterproof but will dry inside and out and won't get clammy, and once broken-in will feel good on your body, subtly changing shape to match you like the proverbial old boot.
However, cost, ethical considerations, or a lack of interest in the regular care required by leather products mean we also have plenty of other excellent saddles that we ride ourselves, and whose quality we stand by.
We prefer saddles without too much padding since it tends to fold and chafe on really long rides, though a rock-hard chunk of plastic isn't very fun to sit on. A little bit of thin foam truly goes a long way.
You should get a saddle roughly the right width for your sit-bones. Usually a wider saddle works a bit better if you're sitting upright on the bike, and a narrower one is more comfortable if you're more bent-over.
